An Italian invention, simple and brilliant
Stracciatella gelato was born in 1961 in Bergamo, Italy, in a small gelateria called "La Marianna". In seeking to create a unique flavor, master ice cream maker Enrico Panattoni had an idea as simple as it was ingenious:
He poured melted hot chocolate into a creamy Fior di Latte ice cream base. The chocolate instantly solidified into fine shards when it came into contact with the cold ice cream, creating the crunchy little “strips” that give Stracciatella its name. The term comes from the Italian “stracciare ,” which means “to tear” or “to fray.”
In Italy, the word "Stracciatella" does not only mean ice cream. It also refers to two other typical delicacies: Stracciatella soup , prepared with a mixture of beaten eggs, parmesan cheese and hot broth, and Straciatella di Bufala, a creamy Italian fresh cheese. The first owes its name to the "scraps" of egg found in the soup, the second to its texture composed of pieces of mozzarella mixed with cream.
A flavor that conquered the world
Thanks to its elegance and unique texture, Stracciatella ice cream quickly became a classic of Italian gelaterias, then an international success. Its perfect marriage between the sweetness of milk flower ice cream and the intensity of crunchy chocolate makes it irresistible.
